The Quest for the Best Kottu Roti in Arugam Bay

If you walk down the main street of Arugam Bay after 7:00 PM, you will hear a distinct sound.
Clack-clack-clack-clack.
It sounds like a construction site, or a drum solo on a metal plate. It is the heartbeat of Sri Lankan nightlife. It is the sound of Kottu Roti.
Kottu is the ultimate Sri Lankan comfort food. It is our version of a burger, a kebab, and a stir-fry all rolled into one. It is greasy, spicy, carb-heavy, and absolutely delicious.
No trip to A-Bay is complete without eating it at least once (or every night after the bar). Here is your guide to finding the best plate in town.
What Exactly IS Kottu?
For the uninitiated, Kottu is a stir-fry made of Godhamba Roti (a thin, flat bread).
The chef takes the roti and throws it on a scorching hot metal griddle. Then, they add vegetables (leeks, carrots, onions), egg, spices, and your choice of meat (chicken, beef, or seafood).
Then comes the magic. Using two blunt metal blades, they rhythmically chop the bread and ingredients together while they cook. This chopping process infuses the flavor of the curry sauce into every single piece of bread.

The Great Debate: Chicken vs. Cheese
There are two main schools of thought when ordering Kottu.
1. The Classic Chicken Kottu This is the purist's choice. It is spicy, dry, and savory. You really taste the roasted curry powder and the char from the grill. It often comes with a side of gravy to pour over it.
2. The Cheese Kottu This is the crowd favorite, especially for tourists. It is NOT just cheese on top. They add Happy Cow cheese wedges and milk into the mix while chopping. The result is a creamy, gooey, cheesy pasta-like consistency that cuts down the spice level. It is rich, heavy, and life-changing.
Pro Tip: If you see "Dolphin Kottu" on the menu, don't panic! It contains no dolphin. It is a slang name for a specific style of Kottu where the roti pieces are left much bigger (like dolphin noses) and it is cooked with extra milk. It is super soft and delicious.

Where to Find the Best Chop
Tandoori City Located right on the main drag, Tandoori City is famous for its open kitchen. You can stand on the pavement and watch the chefs work up a sweat. Their portions are massive (one plate can easily feed two people), and their spice level is perfect.
Arugam Bay Food Court For a no-frills experience, hit the small local stalls near the bridge end of town. The setup is basic plastic chairs and neon lights but the flavor is smoky and authentic.
Gecko If you want a slightly "cleaner" or less oily version, Gecko serves a fantastic Kottu made with high-quality ingredients. It’s a bit more expensive, but great if you have a sensitive stomach.
How to Order Like a Pro
Choose your spice: Sri Lankan standard is very spicy. If you can't handle heat, ask for "No Chili" or "Mild." The curry gravy will still have some kick, but they won't add extra raw chili pieces.
Add an egg: Always say "Yes" to the egg. It binds everything together.
Share it: Seriously, the portions are huge. Order one Kottu and a side of plain Roti to share between two people.

Final Verdict
Kottu is more than just dinner; it is a performance art.
Grab a cold soda, stand by the griddle, enjoy the show, and prepare for the best carb-coma of your life.
